The Incredible...The Edible... The Egg...plus a Breakfast Burrito Recipe

Did you see the news?
Eggs are new and improved.

than previously thought.

One can safely eat up to four eggs per week...and still be considered healthy.
Not to mention...they are an incredible source of protein...the most complete protein...next to mother's breast milk.

And not to mention...economical.
Recently, eggs were on sale for 98 cents/dozen here.
That's about 16 cents for a serving of high quality protein.
The Breakfast Burrito
(not just for breakfast)

1/2 pound breakfast sausage
1 tbsp. butter
6 eggs, beaten
4 to 6 four tortillas
Filling options:
1/2 cup grated Monterey Jack cheese
1 plum tomato, chopped
1 small onion, diced
1/4 green and/or red pepper, chopped
1/2 avocado, sliced
Salsa
Black olives
In a small skillet brown Italian Breakfast Sausage, drain grease.
In another skillet, melt butter and scramble the eggs.
Meanwhile, warm the tortillas for a few minutes on the rack of a 250 degree oven, then fill with egg, sausage and your choice of ingredients. Fold into a burrito.


Sooo...the next time your family is on the go...
Serve an egg dish.

This is a delicious blend! We add chile here to our breakfast burritos...well just to about anything that has a tortilla included. :D This is an excellent alternative for those who don't have access to green chile. Thank you Natalie! I need to send a copy of this to a friend of mine!

The burrito looks delish. Hubby won't eat eggs so I'm thinking of making him one simply eggless. Guess that takes the "breakfast" angle out but then, he'd probably eat it in the morning anyway!

My husband doesn't like scrambled eggs but he loves breakfast burritos. Go figure! I like eggs just about any way they can be fixed.
