Hello October ~There’s a Chill in the Air ~It’s Soup Weather ~Lasagna Soup Recipe

I love to make soup, and this is one of our favorites.
Lasagna Soup is easy to make and oh, so savory.
 Here’s what you need...

2 lb. Ground Beef or Turkey
1 lb. Ground Italian Sausage
4 cups Chicken Broth
1 Onion, chopped
1/2 Green or Red Pepper, diced
4 cloves Garlic, minced
Fresh or Dried Basil
Fresh or Dried Oregano
Crushed Red Pepper Flakes
24 oz. Marinara Sauce
15 oz. Diced Tomatoes
Salt and Pepper to taste
8 oz. Lasagna Noodles

Our Supermarket makes their own Italian Sausage
and it is so tasty. I also use it for Spaghetti Sauce,
and when I make a Lasagna in the pan.

Brown the ground beef and sausage
until no pink remains.

I like to thoroughly drain off all the grease
by pouring it into a strainer.


This was a good opportunity to use some
of the fresh oregano and basil from our patio garden.
Just give it a rough chop.

Cut up the onion, pepper, and garlic.

Add all of that to the meat,
along with the Chicken Broth,
Marinara, and Diced Tomatoes.
Don’t forget your Slow Cooker Liner
for an easy cleanup.

Simmer on high for four hours.

Crack the lasagna noodles into pieces.
Add to the Soup for the last hour of cooking time.

You may need to add a little more broth
to achieve your desired soup consistency.
Garnish with Mozzarella or Parmesan Cheese.
