Stitching and Stewing on Sunday

Well, not so much...This is my view from my spot on the couch. Today, I am not feeling so swell. I have a headache, a slight fever, a headache, a runny nose and a headache. Now...I ususally don't get sick. Last year I used only one sick day and that, I believe was due to stress. (Remember the naughty boys that did intentional damage in my classroom and I was not sleeping at night?) I have not had a bad cold...since...can't remember when. So I am on the couch and Callie is showing her support from the loveseat across the way...See the look of concern on her face?

Now if I was up to going somewhere, my sister-in-law is having a little BBQ at her place. We were to bring a dish to pass. My plan was to make my Zucchini Casserole, but I'm sure no one wants to eat anything that I have touched...But here is my recipe anyway...

Zucchini Casserole

INGREDIENTS
6 cups sliced zucchini
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream, lowfat
1 cup chopped onion
1 cup shredded carrots
1 (6 ounce) package herb-seasoned dry bread stuffing mix (I have used my own dried seasoned bread cubes here to reduce the sodium)
1/2 cup margarine, melted


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
In a large saucepan over medium-high heat, cook zucchini in lightly salted water until crisp-tender, about 5 minutes. Drain, and place in a large bowl. Stir in the condensed soup, sour cream, onion and carrots.
In a small bowl, Mix together stuffing and melted margarine. Spread half of the stuffing mixture in the bottom of the casserole dish. Add the zucchini mixture, and top with remaining stuffing mixture.
Bake for 20 minutes in the preheated oven, or until the top is golden.

Oh Natalie, I hope you are feeling better soon. If not, go to the DR.
Lauren is sick today too, flu like symptoms and we may end up at the clinic tomorrow. we have had many outbreaks of the H1N1 here and I am not going to wait around and see and I hope you don't either.

I love Callie. I think she is trying to send you good feeling thougts.

Get well soon! I know it must be a bummer to feel yucky when you don't normally get sick. Good for you that you're normally healthy. You must take good care of yourself! Hope you get lots of rest tonite. Take care!

I'm so sorry you're sick! I've had a sore throat for over a week now, I just can't get over it. Especially not with kids hacking and coughing all day long. I hope you get better soon!
