It was Fruit & Vegetable Week in my Foods Class ~with our Fruit Pizza Recipe Link

We devote an entire week to the study of fruits and vegetables.
Students create Power Point Presentations 
on a fruit or vegetable of their choice.

Their presentations include nutritional information,
selection and storage tips, and two interesting facts.
Their creative use of technology always impresses me!

And then we make Fruit Pizzas...notice our crust.
We make our own with the whole grain goodness of rolled oats.
(The recipe calls for nuts, but due to allergies, we do not use them at school.)

The cream cheese layer uses the pineapple juice 
from the can of tidbits.

Speaking of creativity...
I challenge them to think of the color placement of their fruits 
to create a pleasant presentation.

We discuss the different forms of fruit...
fresh, canned, frozen and dried.

We talk about reading the can's label to see what the fruit is packed in 
and to be sure get the style that meets your needs.

Pay attention to peak season and the prices.

TGIF ~Finally Friday ~~Where the Week Went ~~Fruit Pizza Recipe Link

We are having beautiful weather this fall.
So warm, that the forecast predicts 
possible record breaking temps this weekend.
When we were growing up,
we called this our "Indian Summer"

It was a perfect week for the
fruits and vegetable unit in my Foods Class.

Fresh Fuit...so refreshing.




...so colorful

...so creative


...so delicious!

The crust has whole grain rolled oats and nuts for a healthy twist.
I also purchase the lower fat Neufchatel Cheese.

How was school today?


My first block class is Fitness for Life. I have been team teaching this with one of the PE teachers for 7 years now. It is an amazing concept. The students meet every other day with the PE teacher and work out...weights, cardio, games...the idea is to find activities that they enjoy, that can become a part of their lifestyle.
Then every other day they come to my Foods room to discuss Nutrition and making good choices. This week we made a Blender Drink and Whole Wheat Pancakes.
Orange Drink

6 oz. frozen orange juice concentrate

1 cup lowfat milk

1 cup water

1/4 cup sugar

1 tsp. vanilla

10 - 12 ice cubes
Place first 5 ingredients in blender and whirl. Add ice and blend until desired consistency.

The pancakes seemed to be a hit. Well, especially since we start our at at 8:10 a.m. I did search through several recipes. Teenagers are not all fond of eating products that are too whole grainy. This recipe used both white and whole wheat flour, so good for gluten development and has the whole grain goodness!

Whole Wheat Pancakes
1 cup all purpose flour
1 cup whole wheat flour
1/4 teaspoon salt
2 teaspoons baking powder
1 Tablespoon sugar
2 large eggs
1 1/2 to 2 cups lowfat milk
2 Tablespoons melted butter
Directions
Makes 4-6 large pancakes. Combine the dry ingredients. Combine the wet ingredients and stir into the dry ingredients. Cook on a griddle or in a nonstick skillet, over medium-low heat. (If the griddle's too hot, the outside will burn before they're ready to be flipped.)
Number of Servings: 6
